Summer Rains & a Field of Broccoli (July 19-23, 2022)

A whole day of rain! I has been weeks, maybe even months since we had one of those! It was so wet I wasn’t sure if the truck would make it in through the fields to check on the green beans. We did however make it to the broccoli, and wow, there was a lot to be had! It’s not all perfect, folks, but it is pretty darned good. Growing broccoli organically is something that has to be carefully managed, or else you may as well not grow it at all. You can lose an entire crop to a pest called the swede midge. Thankfully, this crop got the care it needed to thrive, and we have enough to send all the shares this week. One of our family’s favourite way to enjoy broccoli is a sausage, broccoli and pierogi skillet.

Recipe: Taco Salad

Featuring green leaf lettuce, zucchini, grape tomatoes, garlic scapes or chives and/or green onions (serves 4-5)

Few meals get my family more jazzed than this one! My family did a mix of tacos with hard shells and taco salad. I’m so glad my mom introduced me to adding shredded or diced zucchini to taco meat mix. It really does an awesome job of keeping it moist (not to mention reducing the amount of meat we consume). The addition of lime, and salted radishes as a side, are 2 things I learned while in Mexico back in college….and boy, do they know food in Mexico!

Ingredients

  • 1lb ground beef
  • 1/2lb zucchini (or 1 medium), shredded
  • garlic scapes, chopped
  • taco seasoning (or chili powder, cumin, salt and paprika)
  • juice of 1 lime
  • green leaf lettuce (washed and chopped or torn into small pieces)
  • grape tomatoes (halved)
  • green onions (chopped)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream or to taste
  • bag of tortilla chips (we like organic Que Pasa)
  • 2 large avocadoes (optional)
  • bunch of radish, washed tops and roots removed and salted

Directions

  1. Cook ground beef over medium heat in saucepan. When almost cooked, add shredded zucchini and garlic scapes, followed by taco seasoning. When cooked, add fresh lime juice.
  2. Assemble lettuce, tomato, tortillas, cheese, meat mixture, sour cream and green onions as well as avocadoes or radish if using. You may wish to slice them for easy eating.
  3. Enjoy!

Tip: Sometimes super fresh zucchini is a little too moist: you may need your zucchini to “sweat”, which means you salt it and let it ooze out some water in a colander before adding to the bread
