Can you believe we’re half way through August?! By this time of year, we are done most of the planting in the fields. Whatever is in there, is in there and we’re busy trying to save it all from the weeds, which go bananas this time of year. I checked on a few crops this week that were not what I was hoping. The sweet corn does not look like it’s going to turn out this year, and the carrots, while they look great, are probably another 2 weeks away from harvest. Patience!
However. a new crop of broccoli is greatly abundant, and I don’t think I’ve ever seen such an amazing field of swiss chard in my life! Row upon row of big beauties- I hope you can embrace these super nutritious dark leafy greens.
The peppers, after humble beginnings with a low germination rate, are working hard, and we had to thin out the abundant green peppers so the poor plants don’t collapse under the weight!

Swiss Chard with Garbanzo Beans and Fresh Tomatoes
Enjoy your swiss chard and fresh tomatoes in one hearty dish.

Directions
Heat olive oil in a large skillet. Stir in shallot and green onions; cook and stir for 3 to 5 minutes, or until soft and fragrant. Stir in garbanzo beans, and season with salt and pepper; heat through. Place chard in pan, and cook until wilted. Add tomato slices, squeeze lemon juice over greens, and heat through. Plate, and season with salt and pepper to taste.

Have you tried duck before? It’s somewhat like chicken but with a heartier flavour that lends itself to a sweet glaze. They tend to be leaner on meat, pound for pound, but they make up for it on flavour. Let me know if you would like to try. We still have a few left in stock.
I cooked mine a little hotter than the recipe to speed things along (these things take TIME). I won’t say it was perfect, but it did taste pretty darned good, and I just love the leftover meat for sandwiches.
