Where are all my Rogers people at? This past weekend must have felt like like stepping back in time- plus a whole lot of chaos. I hope everyone was able to get what they need and maybe even meet a kind stranger to help or be helped by. I feel our times of challenge and distress can lead to some beautiful moments if we look beyond the frustrations of the moment…but this is from a gal that had her phone and internet rolling just fine ;). lol.
This week I was blessed by the thoughtfulness of a farm share member that not only shared a recipe for us to enjoy, but actually made it for my family! Wow, thanks for being so generous with your time, B. We sure enjoyed the results and the recipe is below.
This week zucchini makes its appearance as does broccoli. They might be off to a slow start, but wait until we get a rain (neither are on irrigation) and watch them GO! We are expecting some rain tonight! The raspberries are doing well despite the lack of rain. I thought it was about time the fruit share members got some local fruit to enjoy!
Arugula may be a new one to many of you. This peppery green is amazing for your health and full of flavour. Look back to last week’s blog for some recipe ideas.

Apple Cake (Apfelkuchen)
This delicious cake is a great recipe to enjoy in season fruit. Farm Share member B uses the same recipe for other fruits like rhubarb. Thanks B!
Apparently I goofed trying to write out the recipe for you all (I blame the late post). Here I am attatching the original so I don’t mess it up! B notes It needs oil and is also better with the addition of the sour cream. Works best in a 9×9 inch pan for higher cake. Also need to use firm apples.
Spinach, Chicken, Goat Cheese and Grape Tomato Rotini
My oldest has been begging me for this one for a while. Whenever we have spinach and grape tomatoes at the same time, this recipe simply has to happen!
Ingredients
- bunch of spinach, washed (I like to soak them in water in the sink or a bowl, twice. All the grit falls to the bottom)
- small box of rotini pasta of your choice
- 1lb chicken breast (if desired)
- 1 pint grape tomatoes
- 200g goat cheese (or feta cheese)
- 1/4 cup olive oil
- Italian seasoning
- sautéed garlic or garlic powder
Directions
- Slice chicken into strips and cook in a pan over medium heat with a tbsp oil, turning for even cooking. Meanwhile, wash spinach and grape tomatoes. Remove chicken from heat when cooked.
- Boil a large pot of water. Add pasta and cook as per directions. Closer to al dente is best. Add spinach (chop up smaller if desired) and add to pasta in last 3 minutes of cooking.
- Drain cooked pasta and spinach in collander and rinse with hot water. Return to pot with olive oil, adding italian seasoning, chicken, and goat cheese (use grumbles or break into crumbles with a fork). Mix well and add grape tomatoes right before serving. (My family prefers these uncooked).
- Serve hot…or cold. Leftovers rock! Keep tomatoes separate for leftovers or when you reheat you will have explosive hot cherry bombs lol.
