Summer meets Fall (Aug 30-Sept 3)

Aug 29, 2022 | Box Contents

So I might be jumping the gun a little.

I know everyone is still trying to squeeze some more fun out of summer. The mix we harvested from some of our properties today I thought seemed an odd combination. Seeing the rich green of fresh beans and the striking orange of a pie pumpkin together…a little odd, but I’m all for it. I know some of you pumpkin spice people are already dreaming about it and even surrounding yourself with the scent and the sight of it. So here’s a pretty pumpkin (for our whole shares), to gaze at longingly until the urge to make some muffins, soup or pie takes over!

A lot of summer with a hint of fall.

Ground cherries are here this week. This sweet treat grows similarly to a tomato but with a sweet and tropical taste and in these adorable little wrappers. They fall to the ground when ripe but the clever wrappers protect them from damage and keep them clean. Try them in your bento boxes for an easy sweet treat or garnish some cupcakes with them if you want to be fancy.

Finally the big field tomatoes are going strong! They took forever this year with the cool nights in July (normally July is one bog heatwave with no place to hide!). These field tomatoes are good to go for any meal. On your breakfast sandwich, on your burger, or even just sliced up on the side with some mac n cheese. Tomatoes on toast is a classic here on the farm. Don’t forget the salt and pepper!

The fastest flat tire and repair of my life, thanks to my farmer/hero!

Can I just brag on my hubby for a moment? After a torrential downpour put a pause on some of my harvesting plans (I’d say a good kilometer toward the back of our property), the tire on my side by side did a dramatic pop-hiss over an unseen obstacle. I raced back to the air compressor as that tire deflated rapidly. I drive it over and Doug is right on it, diagnosing and fixing it. It took him like 20 minutes tops- I swear! As a farmer, you sure need someone with mechanical skills around. He was just fixing his delivery truck yesterday, and tractors today. My own farmer hero ;).

This week we have chinese cabbage. I tell you, this cabbage loves any stir fry or noodle dish. Tonight I made this Chinese Cabbage and Ramen Noodle Salad. If you like a good crunch and asian flavours, I bet you’ll enjoy this!

Chinese Cabbage and Ramen Salad

Chinese Cabbage and Ramen Noodle Salad

Ingredients

  • 2 tablespoons butter
  • 3 ounce package ramen noodles, seasoning packet removed
  • 1/2 cup slivered almonds
  • 3 tablespoons sesame seeds
  • 1 1/2 lbs Napa cabbage, about 8-10 cups shredded
  • 1 bunch green onions, sliced thin, about 1/2 cup (I used a small yellow onion and sauteed it with the ramen mix, then minced the green tops to top the salad)

Dressing Ingredients

  • 1/2 cup light flavored olive oil
  • 1/4 cup plain white vinegar
  • 1/2 cup white sugar
  • 2 tablespoons low-sodium soy sauce

Directions

Instructions

  • To make the dressing: Combine the oil, vinegar, sugar, and soy sauce in a jar and shake until the sugar has dissolved. Also try red wine or rice vinegar instead of the white, or 1/4 cup honey in place of the sugar.
  • Melt the butter in a large skillet over medium heat. While the butter is melting, crush the ramen noodles while still inside the package. Remove the seasoning packet and throw away (or set aside for later use).  Add the noodles, almonds, and sesame seeds to the melted butter in the skillet.
  • Saute while stirring frequently, until the noodle mixture is golden brown. Remove to a plate and let cool.
  • Shred or finely chop the cabbage and combine the cabbage and onions in a large mixing bowl. Add the noodle mixture. Pour the dressing over the salad and toss well to combine. Serve immediately.

Notes

Don’t add dressing until it’s ready to serve for best results.

The original directions for the dressing were as follows: Combine the oil, vinegar, sugar, and soy sauce in a medium saucepan. Stir and bring to a boil. Remove from the heat after boiling. Let the dressing cool completely before pouring it over the salad.
